Baked Egg Avocado

Ingredients

  • Eggs
  • Avocado
  • Salt & Pepper

Preparation

  1. Pre-heat oven to 400 degrees.
  2. Cut avocado in half, place is baking dish flesh side up.
  3. Crack an egg into each half.
  4. Sprinkle with salt and pepper.
  5. Bake for 12 minutes.
  6. Enjoy!

Avocado Toast

Ingredients

  • Whole Grain Bread
  • ½ Avocado
  • Feta cheese
  • Capers
  • Red pepper flakes

Preparation

  1. Toast Bread.
  2. Cut avocado in half, scoop out and smash avocado on toast.
  3. Sprinkle avocado with feta cheese, capers and red pepper flakes to taste.
  4. Enjoy!
